I have a full grown male Chipokae in a 55 gal with crushed coral in order to make the water more to its liking. I just recently bought 9 more fry but lost one. I have the new ones in with two Jewels in a 30 gal until they get bigger. How big should I let them get, because I know that they are one of the more aggressive cichlids. The small ones range from 3/4" - 1" and one or two are starting to show male colors.

I would wait at least until they are large enough that he can't eat them or fit them in his mouth. Also if you have a lot of rock work and hiding places you can add them in smaller. If you add them a few at a time it will distribute aggression and not single one guy out.
